Emotes are action characters take ingame, such as sit, talk and many many more. They can be used for exactly what they are called for, such as sit for sitting, or taking a single still during an emote at just the right time can result in a shot that looks nothing like its intended emote. An example of this would be a laugh emote, take at the right time, can look like your character is stunned, revolted or even hurt.
